What kind of mixing paddles you use for making:
- sugar syrup
- creamed honey
- other uses

I saw few options at Mitre10 Mega and Bunnings. But none are stainless steel.

for honey, its nothing more than bit of straight bar across. really basic, not very big. honey is very thick so doesn't take much to get to to stir.
also a big stirrer takes a lot of power to turn.
sugar syrup will be a lot different.

Depends on scale.
I make up my sugar solution in a stainless steel drum with a heating element in the bottom. I just use a long enough, clean piece of wood to stir it. For a small amount just a sturdy wooden spoon works well.
As Tristan pointed out, honey is quite different as it is very thick. If you're creaming a box or two worth then a sturdy, long wooden spoon works well. I would try to do larger quantities myself as I don't have a set up for it.

I made this paddle from a threaded rod, two years ago for mixing sugar syrup. However I would like to buy a proper one. This one will chip off bits of plastic from the pail.

And for honey I will not use it.

I got a mixing paddle from Bunnings for $21.
Heavy and robust with a smooth rounded edge - it will not damage de pail.
Boiling water + 50% of the sugar, mix for 1 min, add rest of the sugar, mix for 4 min. And I got a 2:1 sugar syrup with no sugar crystals at the bottom.

The negative side.
This $21 paddle has an SDS+ fitting, and I didn't know what that is. I always refered to it as qiuck chuck fitting.
As a result the paddle has a bit of vibration in a normal chuck.
